
WHY BIDULE?
We love sparkling wine and we also focus on it in our wine production. Bidule is a word used for the little "thingamajig" collecting yeasts in the neck of bottle of sparkling wine before it is disgorged. And we see the winery exactly the same. While bidule in the bottle keeps yeasts, Bidule as a winery keeps people passioned about wine together. We honor yeasts as key element of the wine, giving it longenity. The same way we understand role of people in the winery.
